Delicious Healthy Organic Coconut Flour Carrot Cake

Fast Chocolate Cake in a Cup for One

  • 1 tablespoon coconut oil
  • 1 - 2 heaped tablespoons organic honey
  • 1/2 teaspoon vanilla extract
  • 1 egg free range, whisked
  • 2 tablespoons organic almond flour
  • 1 tablespoon organic coconut flour
  • ½ to 1 tablespoon organic cocoa powder
  • pinch of salt and baking soda
  • Cream (poured or whipped)

Mix all cake ingredients in a large cup and mix well.  Microwave for 2 minutes.  Top cake with whipped cream to serve - Yum!!!


Chocolate chip cake

  • 1/2 cup butter, melted
  • 1/2 cup coconut milk
  • 12 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup sifted organic coconut flour
  • 1 teaspoon baking powder
  • 1 cup of sweet chocolate chips
Blend together butter, coconut milk, eggs, sugar, salt and vanilla.  Combine coconut flour with baking powder and whisk into batter until there are no lumps.  Fold in chocolate chips.Bake at 175 degrees C for 35-40 mins – enjoy!!   
 

Coffee Cake

Mix

  • 1/2 cup butter
  • 9 eggs
  • 1/2 cup sugar
  • 1/4 cup coconut milk
  • 3/4 teaspoon salt
  • 3/4 teaspoon vanilla
  • 3/4 cup sifted organic coconut flour
  • 3/4 teaspoon baking powder
Topping
  • 2 cups walnuts chopped
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup butter
Mix butter, eggs, sugar, coconut milk, salt and vanilla. Combine coconut flour with baking powder and whisk into batter to remove lumps. Combine topping ingredients together and sprinkle over mix. Bake at 175 degrees C for 35-40 mins - indulge! 
 

Coconut butter cookies

  • 1/2 cup butter
  • 1 cup sugar
  • 4 eggs
  • 1/2 teaspoon vanilla
  • 1/2 cup sifted coconut flour
  • 2 cups grated or flaked coconut
Mix butter, sugar, eggs, vanilla. Stir in coconut flour and coconut. Drop spoon sized mounds onto greased tray. Bake at 190 degrees C for 18-20 mins.

Late Harvest Beet Root Soup

  • 3 large organic beetroot, well chopped
  • 400g tin of organic tomatoes
  • 2 gloves of garlic
  • 1 large onion chopped
  • 1 cup of beef stock
  • 1/2 cup fresh organic cream
  • Salt and Pepper to taste

Add all ingredients other than cream to a large pot with 1 cups of water. Simmer for 30 minutes. Remove from heat and blend well. Add cream then pepper and salt to taste. Return to heat for 5 minutes. Add yogurt and chives to garnish. Serves 6.
